  1. Put two individual sized earthenware dishes (or one large) on the hob and put a tablespoon of oil in each. Turn on the oven to 160C
  2. Add the crushed garlic and fry gently (being careful not to burn it)
  3. In a bowl, mash up the contents of the tomato tin with some salt and pepper plus the paprika. Add the beans. Then pour the mixture into the dishes.
  4. Simmer on the heat for 5 minutes, stirring occasionally.
  5. Take off the heat and break an egg gently over each of the dishes. Place in the oven.
  6. Check every 3 minutes to ensure that the eggs are not over cooked. Remove when they are right for you.
  7. Season with salt and pepper, tabasco (if that’s your thing) and eat with warm crusty bread.
