With the nights drawing in and the temperatures dropping, now is the time when delicious hot food made from seasonal ingredients really hits the spot. And what could be more perfect than a rich mushrooms, lentils and carrots seasoned with onion and red wine and wrapped in a pastry case to form the classic pasty.
Having recently made an effort to eat a fully plant-based diet, we’re really enjoying discovering and experimenting with new recipes. This has become a firm favourite as it’s easy to make and goes well with mashed potato, chips or even as a simple packed lunch.
This recipe does take a bit of prep – the filling needs to cool down before filling the pasties – but boy are they worth it! They freeze really well, meaning that you’ll have several hassle-free meals ready to go!
We serve them with mashed potato, some green veg and a rich onion gravy.
