We’re still experimenting with a plant based diet – that’s no meat or dairy to normal people.
I honestly thought it would be harder. My first thought when Laura suggested it was “WHAT ABOUT THE CHEESE!?” – and it’s true, the convenience of the cheese sandwich and the cheese snack and the cheese-as-a-condiment mindset I’ve had for the last 30 years was a tough one to crack. It took all of 4 days to get over myself.
The truth is, we’re eating better food, feeling better and I’m even running faster (shaved 10 seconds off my best Parkrun time). Is it all due to a plant based diet? Jury’s out. But I can tell you that it’s been a fun way to get out of a culinary rut.
